Fourth Class - First Trial on Making Lamb Sausage

On last friday, we held our class which is supposed to be a holiday on that day, it was Maulidur Rasul Holiday. Unfortunately, because of previous semester break, we had waste a week for our class. Therefore, we replaced it during the holiday.

This is the first time we carried out our project which is making lamb sausage. This is our group task which will be used in the final exam as we will compete with other groups.


Before the task

Like as usual, we will all gather near the chef table and listen to her instruction. All the necessary information regarding our own project is stated down. Later, we'll go and discuss with our group members and take the items that going to be used. Once the ingredients are settled, we divided our job to each group member. Next, it is time to cook.

During the task

We do our own job. In the same time, we help each other in making the working process is working smooth. Making lamb sausage, especially for freshie like us, it is quite difficult but with help from other group, it makes thing become easy. All the steps and ways in preparing the lamb sausage can be seen through the picture below:

The ingredients- 200gm flour, 2 nos lemon, basil, chinese parsley & mozarella cheese(exclude uses), cayenne pepper






lamb shoulder is being cut into small pieces. The bone is thrown away, just flesh is needed.




lemon zest, salt, cayenne pepper mixed to gether to make an aroma for marinating the lamb.

lamb that has been cut into small pieces and been marinate are placed in a big bowl covered with wrapping paper. Later, it is placed in a referigerator for about 30 minutes. let it absorb the marinated ingredients.


marinated lamb, flour, basil, chinese parsley, lemon juice are mixed together to be blend using a robocop.

After the task

After we had done our cooking, some of group have succeed with their first attempt in making their product but not for us. We did well but not as what as we expected. Overall, we satisfied with our first attempt as other group members gave us credit, so it's a compliment for us.


Recommendation

We would like to recommend on the lamb sausage which if can add-in more flour or use breadcrumbs to strength up the structure of the sausage. Secondly, we need to find replacement for beef intestine to be fold together with the mince lamb as the plastic wrap is to light to hold the sausage. Other alternative is by using synthetic collagen.


Conclusion

As what we can conclude based on our result, we did well in making the lamb sausage. The taste is nice and delicious. Unfortunately, the structure of the lamb sausage is totally out and it happen beyond our expectation. No matter what, it is just a first trial and we have a new plan in order to improve our product in the next coming class.
